Drunken Gummies.

I haven't cooked anything in weeks. I've been too lazy to go grocery shopping and am currently living off frozen food and canned soup. That being said, I have a food blog that demands some attention SO I'm sharing the only "recipe" I've made in weeks: alcoholic gummi bears.

What you need (its really complicated)...

  • 750ml of cheap flavored vodka of your choice

  • 4 bags of gummi bears

How to make them...

Put the guumies in a tupperware container large enough to hold them all.

Pour the vodka over the gummies until they're all completely submerged.

Stir the gummies ever couple of hours, adding in more vodka until you've used the entire bottle. I really wouldn't waste your money on good vodka, as long as you use flavored vodka they will turn our very delicious. Let them soak for two days and voilá, you have some drunk gummi bears.

So that was embarrassingly easy, right? Well on that note, I'm off to try and find the motivation to cook something for real. K, byeeee.

The Roast Grill.

On Man v Food, Adam Richmond tried to eat 17 hot dogs (including 17 buns, half a pint of mustard, and one pint of chili sauce) to complete the Hot Dogger Eating Challenge at The Roast Grill. Adam crushed the challenge in about 30 minutes, and as the winner, re-named it the "Man v. Food Hot Dog Challenge".

Why am I telling you this? Because I live about a block from this fine establishment. The Roast Grill was opened in 1940 (by the current owner's grandparents) and is noted for refusing to serve ketchup.

It is a very small place that seats 16 (mostly on stools at the counter + two small tables for two) and only takes cash.

The only options for the hotdogs are mustard, onions, chili, and slaw. The coolest part (or maybe its gross, I'm not sure) is that the hotdogs have been cooked on the same small grill since 1940!

We got our hotdogs with all four toppings and they were really yummy.

I'm not sure I'd say they were the best hot dog I've ever had....but they were good enough for me to want to go back.

Did I mention that the Roast Grill was on TV? Haha because I think that's a good enough reason to give it a try. K, byeee!

Beasley's Chicken + Honey.

Beasley's Chicken + Honey is owned by an amazing chef and restauranter, Ashley Christensen. In 2011 she threw down on Iron Chef with Bobby Flay, and in the same year opened three new restaurants in downtown Raleigh (in addition to one that was already open). GQ Magazine recently called Christensen's collection of restaurants the Mini-Empire of the Year.  Beasely's has special meaning to Christensen, combining both her mom's Memphis upbringing and her dad's amateur beekeeping background; fried chicken + honey = yum.

Christensen prides herself on showcasing fresh, local produce and other offerings in the area, Beasley's is no different - simple food paired with simple urban-chic design. The space offers lots of natural light, a chalkboard menu from floor to ceiling, red top tables with screw lift stools, one large communal table in the middle of the restaurant, and [of course] a nice sized bar with plenty of seating. The last thing to note is that Christensen is environmentally conscious - there are no cans/bottles of soda or beer severed in her restaurant. Eveyrthing is served on tap, including root beer (and they come in mason and jelly jars, who wouldn't love that?!)

Beasley's has a concise menu of three entrees and an array of southern sides and desserts. The food pretty much speaks for itself: upscale, no-nonsense, southern.

Bloody? Roasted Tomato Bloody Mary Mix + Vodka (Gin or Tequila are options too!)

The Bloody Mary was made with so many vegetables and you could taste them all. I got mine with vodka and it was the prefect start to Sunday brunch.

Fried Chicken Waffles + Honey

The Fried Chicken Waffles + Honey are only available late night or for brunch on Sundays. The chicken is a juicy, crunchy, spicy-sweet, southern masterpiece. The waffles are equally amazing.

Chicken Biscuit with Pickled Green Tomatoe, Dijon + Honey and a side of Hook's 3-YR Cheddar Pimento Pimento Mac-N-Cheese Custard

I couldn't say enough good things about this plate if I tried. Wedding bells are going to ring in your mouth when you eat this, it's that good. Trust me its going to get romantic real fast, just enjoy it because its fleeting. I was both stuffed and heartbroken when it was gone.

The Kennedy Biscuits w/ Butter + Honey

Pumpkin Cheesecake w/ Almond + Carmel Sauce

I will be visiting [and then writing about] all of Ashley Christensen's Raleigh restaurants, so look out for those in the future! K, byeeeee.

Breakfast Sammy.

I love breakfast sammies - they are, in my opinion, the best way to start out the day. That being said, I work from home and I am not willing to leave my apartment for breakfast in the mornings (or wake up early enough to make it) when I could just be lazy and eat some cereal instead.  And on weekends I am RARELY awake before most places stop serving breakfast. However, considering the McDonald's Sausage & Egg McMuffin is 450 calories  (and that's without cheese), I think I'm better off sleeping through fast food breakfast. The breakfast sandwiches in this post are only 250 calories! You can make as many or as few as you like, but I always make 6 and freeze the leftovers!

What you need...

  • 1 package of English Muffins

  • 1 package of turkey sausage crumbles

  • 6 slices of cheese

  • 3 eggs

  • Cooking spray

  • Milk (optional)

How to make them...

Preheat the oven to 350 degrees. Grab a muffin tin and lightly spray 6 cups with cooking spray. Crack your eggs and scramble them in a bowl with a little bit of milk, then pour equal parts in each muffin cup; add the sausage crumbles to the eggs.

Bake in the oven for 15-20 minutes. [Sidebar: If you like your eggs runny, instead of scrambling 3 eggs, use 6 and crack one egg in each muffin cup and bake for 10-15 mins. Also use sausage patties instead of crumbles. I've made the sandwiches both ways and each one turned out wonderfully.]

If you'd like your English muffins toasted, slice them in half and place them all out on a baking sheet. Put them in the oven with your eggs and let them toast for a few mins (I put them in when there is 10 mins left).

Once everything is baked and toasted, assemble your sandwich! (I don't have to explain how to do that, right? K, good.)

Save them for later....

If you decide to make more than you  can manage to eat, let your sandwiches cool completely, then wrap them individually in plastic wrap and store them in a freezer-safe plastic bag.

To reheat the sandwich, remove the plastic wrap and wrap it in a paper towel; zap it in the microwave for a few mins. Then (if you have a toaster oven) toast them for a few mins  to make the bread crunchy again.

Okay, I feel like I've taken entirely too much time to explain one of the simplest things to make. My bad. K, byeeeeeee.

Pigs in a Blanket.

It is no secret that pigs in a blanket are delicious, but they usually aren't the smartest snack when it come down to calories. However, its not hard to think of ways to make them healthier. That being said, I'm all about doing things the easy way. Skinnny mom had the right idea. Sure I could have found a recipe to make my own dough, but why not just grab the can of reduced fat crescent rolls instead?

What you will need...

  • Cooking spray

  • 8 turkey dogs

  • 1 can Pilsbury Reduced Fat Crescent Rolls refrigerated dough

  • Reduced fat Colby-Jack cheese (or whatever type of cheese tickles your pickle)

How to make them...

  1. Preheat oven to 375 degrees.

  2. Lightly spray a baking sheet with cooking spray.

  3. Cut each hot dog into four pieces.

  4. Section off cheese slices to make six equal parts.

  5. Take one of the eight triangle pieces of dough and stretch it [or roll it] out a bit. Then cut this piece of dough into four long, narrow triangles. Repeat for each of the remaining seven triangle sections of dough.

  6. Roll one hot dog and one piece of cheese up in each triangle until the pig is snug in its blanket.

  7. Place each pig onto a baking sheet.

  8. Bake for 12 minutes or until dough is golden brown.

Obviously this isn't rocket science, its super easy. But making these simple substations saves a ton of calories. One serving of this tasty snack (4 pigs in a blanket) is only 160 calories and about 6.5g fat.

The best part is that you can't even tell you're eating fake hotdogs. Haha :) K, byeeeee.
