Hot Pineapple Sundae.

This is how I've felt about cooking recently:



In the last three weeks I've been to two weddings and spent 5 (LONG, HOT, STRESSFUL) days moving into a new apartment (with a bigger kitchen, YAY). That being said, cooking and blogging fell to the bottom of my priority list [yet again]. But, I'm back and here to share a mouth watering dessert - Hot Pineapple Sundaes! I shared a picture of this dessert with my friend Amanda, and I think our exchange pretty accurately describes how I felt about it...


I adapted this recipe from Cooking Light. One serving is only 235 calories and 6.4g of fat!

What you need...

  • 3 tablespoons brown sugar

  • 3 tablespoons orange juice

  • 1 1/2 teaspoons honey

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 2 cups chopped fresh pineapple

  • 1/4 cup macadamia nuts, coarsely chopped

  • 2 cups vanilla fat-free frozen yogurt






How to make it...

Preheat broiler to high. Combine first 5 ingredients in a medium bowl, stirring well. Add pineapple.



Toss to coat.



Spread pineapple mixture in a single layer on a cookie sheet lined with foil.



Broil 5 minutes or until bubbly.



Spoon 1/2 cup yogurt into a dessert bowls. Top each serving with about 1/4 cup pineapple mixture and 1 tablespoon nuts.

Skinny Egg Salad.

Sorry for the extended hiatus, its wedding season and I've been very busy (vacationing at the beach, drinking lots of beer, and eating the terribly).

Today I'm sharing one of my favorite lunch recipes - Skinny Egg Salad! I love egg salad and when I started making a conscious effort to eat healthier, I realized it wasn't the best option for me. That being said, it was really easy to figure out a way to make it better for me. All of the fat/calories in an egg are in the yolk...so take most of the yolk out, use low calorie mayo, and BOOM - you've got skinny egg salad!

I make this for lunch quite often. Its very easy and you can double (even triple) the recipe and eat it for a few days! But, when it comes to lunch, I've got a terrible case of food ADD and like to mix it up a lot, so I usually only make one portion when I'm in the mood for it.

What you need...

  • 2 hard boiled eggs, peeled

  • 1/2 tsp dijon or yellow mustard

  • 2 tsp light mayo

  • salt and pepper to taste


Note: I like my egg salad with more mustard than most people, so if you do not, try using 1/4 tsp of mustard. If that is not enough, you can always add more!

How to make it...

First, you obviously need to boil and peel the eggs.



Then you will need to cut the eggs in half.



Discard all but half a yolk.



Chop the eggs and combine with mayo, mustard, salt, and pepper.



Mix it all up and you've got Skinny Egg Salad!



You can have this whole bowl for only 40 calories and 5g of fat.



I like to put my Skinny Egg Salad on a Light English Muffin, for a total of 140 calories. Give it a try, its quite tasty! K, byeee!
